At Mayhawk we are not just interested in flavour development, although this is key to our success, but we are also passionate about the processes and development of new and innovative methods to make unique tasting craft chocolate. This dedication makes our chocolate stand apart from most other chocolate brands who, I am sure you will agree, tend to make a similar, basic type of chocolate to each other, with emulsifiers or additives normally being used in their processes.
As a company we want to think differently. To do this we often build our own machinery and modify other machines to make truly “innovative" chocolate that we develop in our design kitchen and studio. As a rule we don’t tend to just buy in standard ingredients from other companies to flavour our craft chocolate, if we can make or grow our own.
For example we grow our own chilli plants to make a wonderful smoked chilli pepper that we use in our chocolate. Same for the herbs and fruit, like Mint, Rosemary and Strawberries, freshly grown in our greenhouse.
We also have an in-house art design team who create a unique look to our packaging ... all of the original art and design of our packaging is done in-house with an eye to the latest trends, culture and the popular zeitgeist. This is because we want to create a remarkable, eye-catching, environmentally sustainable, recyclable packaging which has an appeal to an emerging fashionable customer base; one who appreciates luxury, art & design, high quality materials, and natural ingredients, (with an environmental ethos) which we bring together in a small-batch craft chocolate facility at Mayhawk.
